PREPARATION AND ICING TIME
50 minutes
cooking time:30-35 mins
pre-heat oven to 180 celsius(350 farenheit)gas mark 4
ingredients
for cake:
8oz (225g)plain flour
2 level teaspoons baking powder
half teaspoon of bicarbonate of soda
quarter teaspoon of salt
2oz (50g) cooking or plain chocolate
8floz (225ml) milk
5oz (150g) butter
10oz (275g) dark brown soft sugar
3 eggs
1 tablespoon of black treacle
1 teaspoon of vanilla essence
for fudge icing:
1lb (450g) granulated sugar
quarter pint of milk
4oz (100/125g) butter
1 level tablespoon of syrup
1 heaped tablespoon of cocoa
2oz (50g) cooking choclate
to make the cake:
sift the flour,baking powder,bicarbonate of soda and salt.put chocolate and milk in pan and on low heat,remove when choc has melted.cream the eggs and sugar until fluffy.beat in one egg at a time adding a little flour at a time.stir in treacle and vanilla essence and fold in remaining flour and stir in cooled choc and milk to make smooth batter type consistency.divide mixture between three greased sandwich tins,7 in(18cm) and bake for required time.turn out cakes and leave to cool.
to make fudge icing:
put all ingredients in large saucepan and heat gently until all the sugar has dissolved,then bring to boil and cook till soft ball stage.this is when u can drip teaspoon of mix into jug off cold water and it immediately forms a ball.leave to cool for 10 mins then beat until is thick enough to spread.spreading icing must be done quickly as sets quite quickly.spread inbetween layers and also on top and leave to set then enjoy.
